Baby in a Basket

"Raindrops on roses and whiskers on kittens,
Bright copper kettles and warm woolen mittens,
Brown paper packages tied up with strings--

but most of all I LOVE babies in laundry baskets!!!




 
The girls and I did some baking today. My mom has a good recipe for quick yeast dough that I use a lot. It doesn't take as long to rise as other doughs.

4-5 cups flour ( I use part wheat/part white)
2 TBSP sugar
1 tsp salt
1.5 TBSP yeast
2 cups warm water
2 TBSP oil
Mix together and knead until soft. Let rest 20 minutes (more or less). Shape and place in greased pan. Let rest 10-20 minutes and bake. For extra fluffiness, place a pan of water in the oven while baking.

See? It's really quick and easy. I don't know the exact time or temp it's supposed to be; I just bake it until it's done. One batch makes 15 rolls or 2 round pizzas.  It's also very good for making doughnuts!

  1. I might have to try this. I love baking breads, but the flour here is so heavy sometimes my bread is fluffy and perfect, more often it is heavy and stubborn to rise. Any advice? In the States I made bread all the time and it worked every time. I love your header, by the way! Maria

  2. I am trying your bread recipe tonight for rolls. BJ loves rolls, and I didn't start early enough today for my normal recipe. I was so happy to have a quick one to try! Thanks for sharing.
